Carignan, Mourvèdre, Syrah et Grenache
Vinification :
macerated for twenty days at a controlled temperature with intermittent pumping over. The Carignan and Grenache are vinified keeping grapes intact.
Ageing :
12 months in oak barrels.
Tasting :
the robe is intense garnet. The nose has notes of liquorice, blackberry jam, and black olive. It is rich and full with strong tannins with a long finish leaving hints of spices, black fruits and pepper.
Pairing :
thick steak or duck magret with fig chutney.
Garde :
8 to 10 years
Service :
16° to 18°C.
