Cinsault, grenache
Vinification :
vinified using the whole pits from the Carignan and Grenache. Long maceration with destemming for Syrah and Mourvèdre. Thermo regulated with pum- ping over.
Tasting :
shades of crimson and garnet. Nose is spicy with notes of black pepper, juniper, and tapenade. An elegant attack on the palate with hints of dark chocolate,fig and black olives. Ripe and silky tannins.
Pairing :
steak or hot camembert cheese.
Garde :
4 to 5 years.
Service :
16° – 18°C.
