Carignan, mourvèdre et syrah

Vinification :
The Syrah, Carignan and Mour- vèdre are carefully de-stalked and sorted, un pressed and left to ferment in small tanks for 25 days. We regularly taste, tailoring our process to ensure that we preserve the strength and subtlety of the aromas.

Harvest :
by hand, transported in little crates to be sorted on a table.

Ageing :
The grape varieties are aged separately: 15 months in 300 L French oak barrels for the Syrah and the Mourvèdre, and several months in 160L amphoras for the Carignan.

Tasting :
A beautiful dark colour, the nose is intense with notes of spices and violet. The attack on the palate is rich and long with complex tannins and hints of candied fruit, vanilla, and orange zest.

Pairing :
Strong and refined cooking, venison stew and other game

Garde :
Over 10 years.
