Sauvignon
Vinification process : Thermo-regulated vinification, stabulation on sludge for 10 days, then fermentation. Aged 1 month on fine lees to release thiols, then 3 months in stainless steel tanks.
Tasting :
Eye | Pale, crystalline color with green highlights.
Nose | Exotic, sappy fruit and pomelos.
Mouth | Lively palate of lemons and pomelos, complexity.
Finish | Mineral, rich with lemony notes.
Food and wine pairing : Oysters and seashells.
Ageing potential : 1-3 years.

Perfectly illustrates the virtuous circle of nitrogen: leguminous plants planted one row on two will fix the nitrogen from the air and give it back to the soil. The vine will absorb it thanks to its roots.
