Carignan, mourvèdre et syrah
Vinification :
Syrah and Mourvedre are destalked and macerated for 20 days with regular pumping over. The Carignan is left intact. They are assembled before the aging process.
Ageing :
12 months in French oak barrels for part, and in the oval tanks (eggs) for the rest.
Tasting :
Intense ruby robe. The nose is firm and spicy with fine notes of sloe and blackcurrant. The attack is fresh with complex aromas of black fruit and spices. The delicate finish offers elegant tannins.
Pairing :
Duck magret marinated with spices, steak or lamb.
Potential ageing :
8 to 10 years.

16° – 18°C.
