Carignan, Mourvèdre and Syrah
Vinification process : Maceration for around 20 days with destemming for the Syrah and Mourvèdre, with regular pumpingover. Whole-grain vinification for the Carignan. Blending is done before ageing.
Tasting :
Eye | Very intense ruby color.
Nose | Intensely spicy, with aromas of Morello cherry.
Mouth | Great aromatic complexity, black fruit and spices.
Finish | Long and rich.
Food and wine pairing : Paired with duck breast, or Burgundy beef stew.
Potential ageing :
8 to 10 years.

16° – 18°C.
